Vegan Avocado Chocolate Pudding
2 ripe avocados
1/2 cup unsweetened cocoa powder
1/2 cup maple syrup or agave nectar
1/2 cup almond milk or other non-dairy milk
1 tsp vanilla extract
Pinch of salt
Optional toppings: fresh berries, chopped nuts, coconut whipped cream
Cut the avocados in half, remove the pits, and scoop the flesh into a blender or food processor.
Add the cocoa powder, maple syrup or agave nectar, almond milk, vanilla extract, and salt to the blender.
Blend the mixture until smooth and creamy, scraping down the sides as needed.
Taste and adjust the sweetness or saltiness if desired.
Divide the pudding into serving bowls or glasses and chill in the fridge for at least 30 minutes.
Top with fresh berries, chopped nuts, or coconut whipped cream before serving, if desired.
