Vegan Blueberry Muffins
1/2 cup plant-based milk
1/2 cup unsweetened applesauce (but I used 1 banana)
1/2 cup maple syrup or agave
1 teaspoon vanilla extract
2 cups whole-wheat flour
1/2 teaspoon baking soda
1 cup blueberries (fresh or frozen depending on your preference)
* I added 2 tablespoons protein powder and 4 tablespoons oats (optional)
In a large bowl,mix together the milk,applesauce/banana, maple syrup and vanilla
Stir in the flour baking soda until no dry flour is left and the batter is smooth
Gently fold in the blueberries until they are evenly distributed throughout the batter.
In a muffin tin, fill your muffin cups three quarters full of batter
Bake for 25 minutes or until you can stick a knife into the center of muffin and it comes out clean.
* I used frozen berries but I defrost them before I put them in the batter.
