Ingredients

1 1/2 cups all-purpose flour

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup fresh or frozen cranberries, chopped

Zest of 1 orange

1/2 cup orange juice

1/4 cup vegetable oil

1 tsp vanilla extract

Directions

Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Stir in the chopped cranberries and orange zest until well combined.

In a separate bowl, whisk together the orange juice, vegetable oil, and vanilla extract.

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix, as this can result in a tougher bread.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake for 45-50 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Remove the bread from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Once the bread is completely cooled, you can optionally drizzle a simple glaze made from powdered sugar and orange juice on top for added sweetness, if desired.

**Note: If you're using frozen cranberries, you can chop them while they're still frozen, but be sure to measure them after chopping to ensure you have the correct amount. You can also use dried cranberries, but they may be sweeter and not as tart as fresh or frozen cranberries, so you may need to adjust the sugar accordingly.
