Vegan Guacamole Bowl
3 ripe avocados
1 lime, juiced
1 small red onion, diced
1 jalapeño pepper, seeded and minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/2 cup cherry tomatoes, halved
1/4 cup chopped fresh cilantro
Cut the avocados in half and remove the pit. Scoop out the flesh and place it in a medium-sized bowl.
Add the lime juice, diced red onion, minced jalapeño, salt, black pepper, cumin, and chili powder to the bowl with the avocado.
Use a fork to mash the ingredients together until they are well combined and the avocado is mostly smooth.
Add the halved cherry tomatoes and chopped cilantro to the bowl and mix everything together.
Taste the guacamole and adjust the seasoning as needed.
Serve the guacamole in a bowl and garnish with additional cilantro and jalapeño slices if desired.
