Vegan Refried Beans
Ingredients
2 tbsp. olive oil
1 onion, chopped
3 cloves garlic, minced
1/4 tsp. cayenne pepper
1/8 tsp. red pepper flakes
1/2 tsp. ground cumin
1 tsp. dried oregano
2 cans pinto beans
1/2 cup water
1 tbsp. lime juice
1/2 tsp. salt
Directions
Put a frying pan on medium heat and add olive oil and chopped onions to the pan. Cook it for 4-5 minutes until the onions are golden brown.
Add red pepper flakes, cayenne pepper, chopped garlic, oregano, and cumin with the onions. Simmer it with onions for 2 to 3 minutes until all spices mix well.
Add pinto beans with water. Put a lid on the pan and cook it for 5–10 minutes. Turn the burner once the beans are done. Mash the beans with a masher until they have a smooth texture.
Mix it well, and simmer it for an extra 4-5 minutes.
Add cilantro, fresh lime juice, and salt over the beans depending on your preference.
