Vegan Veggie Stew
Ingredients
1 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
2 carrots, chopped
2 stalks celery, chopped
1 sweet potato, peeled and chopped
1 can diced tomatoes
4 cups vegetable broth
1 can chickpeas, drained and rinsed
1 cup green beans, trimmed and chopped
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Directions
Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté for 2-3 minutes, until softened.
Add carrots, celery, and sweet potato to the pot and sauté for 5 minutes, until slightly softened.
Add diced tomatoes, vegetable broth, chickpeas, green beans, oregano, and thyme to the pot. Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes, until vegetables are tender.
Season with salt and pepper, to taste.
Serve hot, garnished with fresh parsley
