White Mac and Cheese
10 oz dry pasta
6 oz sharp white cheddar cheese
4 oz aged sharp Provolone cheese
1/2 cup diced shallots
3 medium garlic cloves
3 tablespoons flour
3 tablespoons butter
1/2 teaspoons chipotle pepper spice
1/4 teaspoons red pepper flakes
2 1/2 cups milk
Salt to taste
Cook pasta and set aside.
Heat butter and sauté chopped shallots and minced garlic.
Mix flour with spices and sprinkle over onions. Add milk while stirring.
When thicken, mix in the grated cheese and pour mixture over pasta.
Mix everything together and transfer to a greased casserole dish.
Top with grated cheese and bake for 15 minutes, at 350 F
