Zucchini Chips (Air Fryer)
1 large zucchini
1/2 c flour
1 tsp Italian Seasoning
1 tsp Paprika or an other favorite seasonings
1/4 c shredded parmessan cheese
salt and pepper to taste
2 beaten eggs
1 1/2-2 cups breadcrumbs (panko are the best).
cooking oil spray
Spray air fryer basket with cooking oil.
Add eggs, flour, and breadcrumbs in to separate bowls.Slice the zucchini into chips about 1/4 of an inch thick. Use a mandolin for slicing, if you have one. Season the flour with salt and pepper, and paprika to taste. Add shredded parmesan.
Dip the zucchini in the flour, then egg, and then the breadcrumbs and place in the air fryer. Coat the chip fully in the eggs so that the breadcrumbs will stick. Spray the zucchini chips with cooking oil spray.
Air Fry for 5 minutes on 400 degrees. Open and flip the chips over. Spray with more oil to avoid sticking and cook for another 4-7 minutes on 400 degrees.
