2 large eggs
2 zucchini, shredded
2 garlic cloves - minced
1 cup breadcrumbs
Whisk eggs together in a large bowl and set aside.
Grate zucchini into the bowl with the eggs.
Add the garlic and breadcrumbs and mix everything together.
Using your hands, form the mixture into patties.If the mixture seems a little wet to handle, put in the refrigerator for about 30 minutes, and that should firm up the mixture.
Heat about 1 tbsp of oil (use any oil of your choice) in a skillet over medium-high heat and cook patties until they’re golden brown on both sides.
