Zucchini Casserole
Ingredients
3 eggs
salt & pepper, to taste
pinch of turmeric
2/3 cup milk
2 zucchinis, cut in cubes
1 onion, diced
olive oil, for frying
1 carrot, grated
2 garlic cloves, minced
1 yellow bell pepper, grated coarsley
1 tomato, coarsley chopped
Italian herbs, to taste
green onions for garnish
Directions
Crack 3 eggs into a bowl, season with salt, black pepper, and turmeric, then whisk well
Add milk to the eggs and mix.
Slice 2 zucchini, sprinkle with a little salt, and let sit for 10 minutes to release excess moisture.
Chop 1 onion and grate 1 carrot on a coarse grater.
Heat a little olive oil in a pan, then add the onion, carrot, and zucchini and fry for 3–5 minutes.
Add minced garlic clovesto the pan, and cook for another 2 minutes.
Add bell pepper and tomato to the pan and mix everything together. Season with a little more black pepper and Italian herbs.
Transfer the mixture to a baking dish, pour the egg-milk mixture over the vegetables, and mix gently.
Bake in the oven at 350° for 25–30 minutes until set and golden.
Garnish with chopped green onions before serving.
