
Ingredients:
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can cream of mushroom soup
1 cup frozen mixed vegetables
1 cup shredded cheddar cheese
1 bag frozen tater tots
salt and pepper to taste
Instructions:
Preheat Oven to 375°F.
Cook ground beef, onion, and garlic over medium heat until beef is browned. Drain any excess fat.
Stir in the cream of mushroom soup and mixed vegetables. Season with salt and pepper.
Pour the mixture into a greased casserole dish and arrange tater tots evenly on top.
Place in the oven and bake for 30 minutes.
Sprinkle shredded cheddar over the top and bake for an additional 10 minutes, until the cheese is melted and tater tots are golden brown.
Notes:
*You could change out the ground beef for ground turkey or chicken for a lighter version.
*Use cream of chicken soup instead of mushroom for a different flavor.
*Add a dash of Worcestershire sauce for extra depth of flavor.
