Cucumber-Mint Salad

Ingredients:
2 english cucumbers, sliced into very thin rings
1 medium red onion, very thinly sliced
1/4 cup greek yogurt, plain and full fat
2 tbsp lime juice, freshly squeezed
1/4 cup fresh mint, leaves sliced thin
salt and fresh cracked pepper, to taste
Instructions:
Mix the ingredients in a bowl.
Let it sit for about 20 minutes. This will soften it and the flavors will meld together, but the crunch will remain.
Serve!
