Crockpot Meatloaf
Ingredients
For the Meatloaf:
1 ½ lbs. ground beef
½ cup breadcrumbs
1 small onion, finely chopped
1 egg, beaten
½ cup milk
1 tbsp. worcestershire
1 tsp. garlic powder
salt and pepper to taste
For the Topping:
¼ cup ketchup
2 tbsp. brown sugar.
1 tbsp. mustard.
Directions
In a large bowl, combine the ground beef, breadcrumbs, onion, beaten egg, milk, Worcestershire sauce, garlic powder, salt, and pepper. Use your hands or a spoon to mix until everything is evenly distributed.
Shape the meat mixture into a loaf and place it in your crockpot.
In a small bowl, whisk together the ketchup, brown sugar, and mustard. Spread the topping evenly over the meatloaf.
Cover and cook on low for 6-7 hours, or until the meatloaf is fully cooked. Cooking times may vary depending on your slow cooker, so check for doneness.
Let the meatloaf rest for about 10 minutes before slicing. This allows the juices to settle, making it easier to slice.
