Crispy Bang Bang Tofu

Ingredients:
Tofu
1 block extra firm tofu, moisture removed
1/4 cup cornstarch, for coating
1 cup panko breadcrumbs
1 tsp. garlic powder
Bang Bang Sauce
1/2 cup vegan mayonnaise
2 tbsp. sriracha
2 tbsp. white sugar
1 tsp. salt
Instructions:
Remove tofu from packaging, drain, wrap in towels, and place a heavy object on top for 5 minutes. Slice pressed tofu into approximately 1-inch cubes, about 32 pieces.
Preheat oven to 400ºF.
Mix cornstarch, panko breadcrumbs, and garlic powder in a bowl. Toss cubed tofu in the coating mixture until evenly coated.
Spread coated tofu on a baking sheet and bake for 40 minutes, flipping halfway through.
Whisk together vegan mayonnaise, sriracha, sugar, and salt in a bowl. Toss baked tofu in sauce and mix sauce until well coated.
Serve with rice or on its own. Garnish with red pepper flakes and chopped chives.
