
Ingredients:
300 g. frozen peas
1 handful fresh mint leaves
100 g. breadcrumbs
100 g. grated cheddar
2 eggs
salt & pepper to taste
vegetable oil for frying
Instructions:
Boil peas until tender, drain, and blend with mint leaves until smooth.
In a bowl, combine blended peas, breadcrumbs, cheddar, and one egg. Season with salt and pepper.
Form mixture into small croquettes. Beat remaining egg in a bowl for coating.
Heat oil in a pan and fry croquettes until golden brown, drain excess oil on paper towels.
