Ingredients

1 cup garlic cloves, peeled

1 cup white vinegar

1/2 cup water

1 tbsp. sugar

1 tbsp. salt

1 tsp. red pepper flakes

1 tsp. black peppercorns

1 tsp. mustard seeds

1 bay leaf

Directions

In a medium saucepan, combine the white vinegar, water, sugar, and salt. Bring the mixture to a boil over medium heat, stirring until the sugar and salt are dissolved.

Once boiling, add the garlic cloves, red pepper flakes, black peppercorns, mustard seeds, and bay leaf to the saucepan. Reduce the heat and let it simmer for about 5 minutes.

Remove the saucepan from heat and allow the mixture to cool slightly.

Transfer the garlic and brine into a clean, sterilized jar, ensuring the garlic is fully submerged in the liquid. Seal the jar tightly.

Let the jar sit at room temperature for 1-2 days to allow the flavors to meld, then refrigerate. The pickled garlic will be ready to enjoy after about a week and can be stored in the refrigerator for up to 3 months.
