Burrito Casserole


1 lb ground beef, or ground turkey

1⁄2 medium yellow onion, chopped

1 package (1 1/4 ounce) taco seasoning mix

6 large flour tortilla

1 can (16 ounce) refried beans

2 cup (up to 3) taco cheese, or cheddar cheese, shredded

1 can (10 3/4 ounce) cream of mushroom soup

4 oz sour cream

1 jarred hot sauce, optional


Brown ground meat and onion; drain.

Add taco seasoning and stir in refried beans.

In a separate bowl, mix soup and sour cream.

Spread 1/2 sour cream mixture in the bottom of a casserole dish.

Tear up 3 tortillas and place over sour cream mixture.

Put 1/2 of meat and bean mixture on top of tortillas.

Add a layer of cheese.

Sprinkle with hot sauce if using.

Repeat the layers.

Sprinkle cheese over the top and bake uncovered at 350 degrees F (175 degrees C) for 20-30 minutes.
