Greek Baked Beans

Ingredients:
2 cups dried large beans(soaked overnight)
Olive oil
2 onions chopped
1 carrot chopped
3 cloves of garlic crushed
3 spring onions chopped
1 can chopped crushed tomatoes
A bunch of parsley washed and chopped
dried oregano
salt and pepper
water
Instructions:
Put drained dried beans in pot. Cover with cold water and boil for 45 minutes.
Meanwhile while the beans are boiling. In a heavy based pan drizzle with olive oil medium heat on the stove cook onions, garlic and carrots for 5 minutes than add spring onions and parsley followed by the chopped cans crushed tomatoes and 2 cups of water.
Add salt, pepper and oregano. Cook for 10 minutes. Than combine cooked beans and sauce mixture in a large baking dish and drizzle with olive oil and mix.
Bake in the oven for 180c at 30 minutes.
