Ingredients:
1 purple cabbage, cut in 1/4-inch thick slices
4 red plums, sliced
1 red onion, thinly sliced
1/3 cup maple syrup
2 tbsp olive oil
2 tbsp Dijon mustard
1 tbsp caraway seeds
Instructions:
Preheat oven to 425°F/220°C.
In large bowl, combine all ingredients.
Divide between 2 large rimmed baking sheets and bake on middle and lower-third racks for 40 minutes, stirring once and switching pans halfway through.
