Ingredients:
1¼ pounds lean ground turkey
2 Tbsp chili powder
1 Tbsp salt
1 Tbsp pepper
4 Tbsp fresh cilantro, chopped
3 Tbsp lime juice
2 Tbsp Low sodium soy sauce
3 Tbsp creamy peanut butter
2 tsp red chili paste
1 tsp sugar
1 cup shredded carrots
⅓ cup chopped roasted peanuts
12 Bibb lettuce leaves
Instructions:
In a large non-stick skillet cook turkey with chili powder, salt & pepper until thoroughly cooked and nicely browned
Drain and return to skillet
In a small bowl combine cilantro, lime juice, soy sauce, peanut butter, chili paste & sugar – add a small amount of water if needed
Pour sauce over cooked turkey and stir well
Continue to cook over medium-low heat for 3-4 minutes or until heated through
When ready, spoon 2 heaping tablespoons of turkey mixture into each lettuce leaf and top with carrots and peanuts.
You can serve with spicy peanut sauce, avocados, water chestnuts or even add black beans
